由木糖紅β-1,4-糖苷鍵連接而成,分子量約 30000(200個(gè)糖單位),白色無定形粉末,不溶于冷水,溶于稀堿溶液,隨樣品不同,旋光度[α]D-71.2°到-109.5°。存在于陸上、海中的植物的莖中及谷皮中。先用稀堿從上述材料中抽提,然后加酸至PH值4.2使其沉淀,重復(fù)此過程,可制得較純的木聚糖。

木聚糖(xylan)為多聚五碳糖,是半纖維素的一種,廣泛存在于植物細(xì)胞壁中,是自然界含量?jī)H次于纖維素的碳水化合物。木聚糖的結(jié)構(gòu)單元是木糖,通過木糖苷鍵連接的木糖長(zhǎng)鏈成為主鏈,在主鏈上部分基團(tuán)被側(cè)鏈基團(tuán)取代,這些側(cè)鏈基團(tuán)有乙?;?、阿拉伯糖基、半乳糖基、葡萄糖醛酸基、香豆酸、阿魏酸等,木聚糖再通過側(cè)鏈基團(tuán)與植物的其余成分如纖維素、木質(zhì)素、果膠相連接形成致密的結(jié)構(gòu),共同構(gòu)成了植物體的支持骨架
